It is important to soak and rinse the rice to achieve the right texture after steaming. Rice is drained with the basket, and remains in the basket and placed back into the kettle pot for steaming. Cover the rice in the basket with a lid for best results. Steam 15 minutes on one side, remove lid, carefully take basket out and the round gluten oyster ball of rice will allow you to toss it, and roll it over. Steam another 15 minutes.
