So if your splitting hair you only need to use 80% of active dry yeast measurement when using instant. That's why weighing is so much better than measuring volume, conversions are easy. The closest equivalent to instant yeast in the supermarket is bread machine yeast, in fact, I would stick my neck out to guess bread machine yeast IS probably instant yeast simply re-packaged as bread machine yeast. What's important to know about instant yeast is it gives the most uniform and repeatable results compared to all other "consumer" forms of yeast. That's why commercial bakers depend on it and scale using it in large batches with repeatable results without worry or messing around. Buy a bag, put it in an airtight container and store it in the freezer. I've kept mine that for 3 or 4 years with no ill effects and replace it just as a matter of routine. So effectively I have 1 year to use this product before expiration.
