Then, I found this buttermilk powder and it's changed my baking and cooking for the better! When used in cake batters, the recommendation is to measure the powder and add it directly to the dry ingredients and then add the liquid (you can use water or milk - I prefer milk) to the wet ingredients. It works EXACTLY the same as liquid buttermilk in recipes both in adding the acidic factor for leavening in cake and other baked goods, and adds the buttermilk flavor to other cooking products (i.e., buttermilk dressings, etc). As it is a dry good, it is shelf stable for months on end. I transfer the powder from the original container to 1 quart mason jars with tight sealing lids. This is a MUST for bakers and cooks who don't want to waste liquid buttermilk.
