Emile Henry Artisan Bread Baker allows you to bake all kinds of home-made bread, explore different textures and flavours; just like those hand-crafted by artisan! Since 1850, Emile Henry has produced in France a large range of high quality ceramic cooking utensils. our products are made from natural materials and have been designed and manufactured in France, in Southern Burgundy. Controlled production, without waste, is part of our daily commitment: the CO2 expelled from our workshops is particularly low thanks to our modern firing techniques that require less energy. The waste, in general, is recycled and the water used in production is filtered and used again in the production process. Our dishes have always been produced in France, in Marcigny in the South of Burgundy: it is a tradition and savoir-faire which has been handed down from generation to generation. Each Worker prepares his moulds, produces his dishes and signs each one with his Initials. We are proud of this responsibility entrusted to each of our workers, which is a pledge of quality for all our production.

Review: Best vessel for sourdough bread baking! - I had been using dutch ovens to bake my sourdough but a neighbor who I baked for, offered me his since he could bake well. As it turns out, with this I can bake 2 pound loaves and still have some room. I no longer need to take off the lid after partial baking to brown the loaf. I just leave the dough in it for the entire bake time and when I take the lid off, it is golden and crispy outside. Best part, I won't break/Crack when moving from hot to cold or vice versa. This allows me to do a cold start, and then for.my next loaf, drop the cold dough I to the hot baker. So I ended up getting a black one to add to my red one so I can bake 2 batards at the same ti.e and when do, load the next 2. Perfect

Was worried about damage during shipment and cracking but it arrived very securely packaged and quickly. The EH website states: "Never preheat your ceramic baking dish dry, always add cooking oil or some type of liquid to the dish. (This does not apply to the Flame products and bread bakers.)" Though the bread baker is the exception, to stay on the safe side I did not preheat the baker as I normally would a dutch oven. Tried a baking in preheated oven with cold fermented dough and room temp baker and the bread turned out nicely - 50 min total at 465F - took the lid off to brown the top towards the end for the last 15 min.

I got this so that I could be sure my sourdough bread would rise more than in a cloche I have of the same brand. It works! The size of the loaf takes about 3/4 of what I previously used to make two loaves, so it makes a large loaf. It works well to hold steam in for half the bake. Taking the top off after that is tricky, because it is very hot, but it does what is intended. I think it could break easily, so care is necessary in handling.
