This version of the Aujus can be tricker to work with than the liquid because it's more of a paste/goo than anything else. It's hard to spoon, and hard to measure. I have a cure for that. Freeze it ! Not only does that make it MUCH easier to work with, but it should last longer. Now, the other issue is measurements for smaller amounts. They don't provide any. Sometimes I just need a 1/2 cup or a cup for me and me alone. Here's what I came up with. Use a kitchen scale set to grams. Put a small solo cup or whatever on it and tare it. Now, for every 1 cup of Au jus you want, use 20 grams of flakes from the frozen goo. This is the one the prime rib places use. *by K***C on November 5, 2025* This is the one that prime rib restaurants use. I have spent a long time trying to find a premade concentrate for jus. Making it from scratch for prime rib is a gigantic pain, and this is a true shortcut that gets very, very close to the real thing. Honestly, if you are not great at making jus yourself, this might even be better. Do not waste your time with the other products you see online. I have tried four or five of them, and they are truly awful. Metallic, acidic, and not something I would ever serve to guests. This base is excellent for jus and also great for enriching soups, stews, or sauces.
