Product description video ABOUT Antimo Caputo Chef's Flour - Italian Double Zero 00 The Chef's flour is a general purpose, high gluten flour that works well for many recipes. You can use it for pizza crust, pasta making, bread, and pastries. "Tipo 00" refers to how refined the flour is, and indicates that it is refined further than regular flour, and that results in using less of the outer parts of the wheat, while also creating a very finely ground product. Tipo "00" is the finest grade of flour milled in Italy, and it has a consistency similar to baby powder. RECIPE The Perfect Pizza Crust Recipe Mix ingredients in a bowl to form a soft dough. Rest for 10 mins, then knead for 5 mins. Coat with oil, cover, and let rise for 2 hours until doubled. Punch down, divide into 3 balls, place in greased zip lock bags, and refrigerate overnight. Before use, let dough warm to room temp (72F or more). Preheat oven to 550F (or max temp). Bake pizza for 7-10 mins until crust browns. Italian Rustic Loaf Preheat oven to 350F. Mix yeast, sugar, and water. Combine with salt and flour. Knead dough, form into ball, coat with oil, and let rise for 35-45 mins. Grease baking sheet, place dough, and let rise for 90 mins. Bake at 350F for 45 mins to 1 hour until golden brown. Cool on wire rack.

**Q: Why is there a bpa warning? how is this in the flour?**
A: I didn't see a BPA warning on the website, and there is none on the packaging, either. It is packaged in paper, not plastic. Maybe in the processing it is exposed to BPA, but it seems that would be negligible. As a lifetime bread baker, this is the best flour I've ever used. It seems much "cleaner" of growing and processing chemicals than US produced flours.

**Q: Can I use this flour for bagels?**
A: Absolutely!

**Q: I received a case of your flour and it was short one bag! what will you do to resolve this problem?**
A: Amazon usually do swap outs for items that arrive “not as described “

**Q: Your informations says good for ovens up to 500 degrees. Will it still work in a wood fired oven of 800-900 degrees?**
A: Anxious to hear the answer to this question and most ALL pizza ovens reach 700-900 degrees.

I have been gluten intolerant since I was 19ish, I am now 42. I was gluten intolerant long before being gluten free was the cool thing to do so, for many of these years, there weren't gluten free options available in stores and there weren't an abundance of gluten free recipes to choose from. Fast forward years later and my daughter found these enzyme pills that help breakdown gluten and they work nicely -I can take the pill, eat gluten, be okay. Fast forward and year or so and an acquaintance of mine tells me that he has no gluten issues in Europe. What!?! I started doing research and found that the US is not as careful in the way the produce, harvest, whatever their wheat and flours. Fast forward some more and my husband decided we were going to purchase this flour, made in Italy. Made bread, ate a few bites, praying I wouldn't get sick. I didn't get sick. We have made bread a couple of times and scones once and I have eaten all of it without issue. This will be the only flour I purchase for the rest of my life. This Italian flour is a different wheat from American. Semolina vs Duram. I am allergic to duram flour, which means no baking or eating pasta etc. for the last 10 years. :( But I am not allergic to this soft wheat flour. :) Delicious, finely ground, easy to use. Last year my daughter entered a pie contest using our former well known duram flour. She did not win. This year she used the Italian flour and won. Same recipe and baker with a different flour. Easy to mix, smooth texture, works very well. I even had a small bite with no rash or other allergic responses. Definitely a win-win!
