Directions To prevent sugar crystallization, glucose syrup is recommended to be used in recipes that require cooking, such as desserts, confectionery, cakes and jams. To achieve greater elasticity of chocolate, royal icing, fondant and gum paste, glucose syrup can be added to the mixture. It is not recommended to use glucose syrup in recipes that do not require cooking, as it can cause sugar to crystallize.
