Any suggestions? Also, do I have to add vital wheat gluten?** A: I adapted a recipe from Steve Gamelan no-knead Bread cookbook.I bought this on Amazon. How I learned breadmaking. I use 1 cup of this flour and 2.5 cup bread flour 1/2 tsp instant yeast,1 tbsp sugar,1 tbsp EVOO;1.5tsp salt in 14 oz cold water; add the flours and mix to shaggy dough.cover bowl with plastic wrap.leave to rise overnight.8-12 hrs. Next morning, punch down to degas. Allow to rise 30 minutes in warm place. I do this in the covered sprayed loaf pan. I turn on my old electric oven and place the pan on the stovetop while the oven preheat to 400 degrees f. Bake in middle of the oven for 40 minutes covered. Then remote cover and if crust isn't crisp enough,bake uncovered to addl 5-15 minutes. Cool completely on wire rack. I haven't purchased bread in 2 yr. Total prep time: 15 minutes before bed and 15 minutes while the coffee brews. The equipment cost me less than $10 at Wal-Mart. I use a ratio of 5:2; bread flour to any whole grain flour to yield a 1-pound loaf. I feel incredibly accomplished having learned to produce delicious bread at age 70. Who says you can't teach an old dog new tricks😃 **Q: Is this multigrain whole grain or is all the goodness stripped out like white wheat flour?** A: I believe it’s whole… makes a dense and heavy loaf with a rich flavor. I use it in my bread maker with a recipe out of the book for the machine. **Q: Will this work with a bread machine?** A: If you do use it in a bread machine, make sure that you don't use too much. Use plenty of white flour. This flour is very heavy and does not rise easily. **Q: Expiration date? Storage life?** A: I purchased mine April 2023, expiration date was Jan 2022. It's officially our favorite bread!! ### ⭐⭐⭐⭐⭐ Substituting this for white flour *by C***V on October 24, 2025* I love this flour. I make my bread with a bread machine which usually requires 4 cups of bread flour. To be sure it is a healthy loaf, I substitute 2 cups with this multi grain, replacing the white flour. It always works well. After reading online, I discovered when using this type of flour, I should add just a bit more moisture because some of these grains absorb moisture more than others. So I usually add a scant 1/4 more of water/milk or whatever moisture the recipe requires.
