Um, yes, you could sand it, but then it would lose it's wood texture. I suggest you stain/seal it, then sand for the desired smooth finish.

Q: How many standard size (36" x 80") 6 panel doors would a gallon cover?

Both sides of the door? Probably 6-8 doors. You don’t have to cover it just like paint so it doesn’t take as much.
