How do you remove the plastic catcher?

just pull straight back. it should come right out. it slides in and out for cleaning

What is the exact weight on a kitchen scale in ounces/grams? I’m considering these of backpacking.

1.98oz (on my kitchen scale) it's traditionally what I've heard as toenail clippers I also have the 6cm version. I prefer the 6cm over the 8cm. The 6cm version weighs .92oz (on my kitchen scale)

What material is it made from?

I do know the grade of steel, it is not surgical steel. I do highly recommend them. I bought 4 different items that I felt might be the best. After testing all of them, I chose this 1 for function and high quality. I have since repurchased about 10 of them. 1 pair for each vehicle, home, work, and family members who keep stealing mine. Buy at least 2, you'll be happy you did.
