Is the honeycomb edible?

Yes. It’s awesome. Store it at room temperature and slide off a whole, drippy chunk. Our favorite ways to enjoy include smearing on warm biscuits in lieu of butter, topping water crackers with sliced bleu cheese and honeycomb, or breaking it into pieces still in the box then adding to a tart cheesecake just before serving. So yum!

Why does it have an expiration date? Honey and honeycomb doesn't expire.

Industry regulation. Expiration dates - on any product, not just honey - are primarily a matter of legal liability rather than strict reality. If a food product makes you sick for whatever reason past the 'expiration date', the producer is legally clear of fault because you took on your own risk by consuming 'expired' food. Also honey can't expire but it *can* degrade so it's really a 'best by' date in this case.

How do you open the box

It's taped shut all the way around; I had to use a knife to slice the tape open all the way around, then it just pulled open into 2 halves
