would these bits drill a hole in stainless steel?

They can. I made sure that I kept them well lubricated but still had to sharpen after about 8 holes.

What does Nitride Coating actually mean?

Nitriding is a heat treating process that improves heat-resistance, toughness and durability.

So why does the picture show left hand drill bits when i assume that these are right hand?

As far as I know they are right hand drill bits. Stated another way when inserted into a drill which is set for forward they will dig into the piece you are drilling. I don't recommend for cutting metal - while usable they wore out quickly assembling some metal ducting for a dust collector.
