Can this analyzer be use on a ham radio antenna between 80m-10m band?

Absolutely. It is a fantastic unit. I use mine for antennas from 500 khz to 600 mhz. There is a user group. If you search you can find a user manual, and some software for your PC.

Is some assembly required?

The one I purchased, and  where you are presumably asking the question, no.  It had an installed battery, only requiring a charge before use (via microUSB connector).  It even came with a calibration in the default "C0" location (0.5 to 900 MHz), though you'll want to do your own calibration over frequency ranges of interest later.  You could add a case to make it more robust to handling "in the field", but that isn't necessary and few do it.  You will likely want some adapters from SMA to BNC, UHF, etc., to connect it to antennas and other devices with those connector types.  Charge the battery, download the documentation, maybe buy some RF connector adapters, that is all you need to do to get started.

Can this vna test 868mhz and 908mhz, 915mhz antenna?

Not sure.  The one I purchased goes to 900 MHz.  The product listing that I bought from now says it operates up to 1.5 GHz (1500 MHz).  This may be a function of firmware version, as the higher frequencies are done with harmonics of the basic oscillator frequency (300 MHz) - which means higher noise and less accuracy - though enough for basic antenna measurements.  The newer version may have slightly improved hardware, but my guess is it depends on your firmware version.  Updating the firmware is not difficult, you just have to make sure you get the firmware for your version of the device (there are only about 4, with a couple of people writing firmware for some of them, and this is the most common type).  Since they now advertise 1.5 GHz, it must come with the later firmware that supports it installed.  So, I'd say "Yes", but not from direct experience.  Remember to do a calibration in the frequency range of interest to get accurate results.

Can it be used on 11 m 26 to 27 MHz

Yes, the NanoVNA operates from 0.10 MHZ to 940 MHz, and with reduced precision over a wider range (depending on firmware version).  Out of the box, the 27 MHz region is in the heart of its operating range.  Be sure to clear the calibration and then calibrate over the frequency range of interest.  Although some posts become pretty technical, a wealth of information is available on the groups.io nanovna-users group, easily located with a search.  They have links to a Wiki and several manuals written by different people, videos, etc.
