Q: Difference between E5 and new E4 ?

The E4 does not include the ceramic honing rod with the microforge feature and cannot accept the additional guides that the E5 upgrade kit offers. For more information please contact our Customer Service at 1-800-418-1439.

Q: Does this set fit the E5 sharpener from Williams Sonoma?

Yes, this Upgrade Kit fits the standard E5. These additional guides are included on the William Sonoma exclusive E5 PLUS.

Q: fit 220v electric power? (Europe)

Mine was 110 only. No switch to change voltage. Check with manufacturer to if on is available in 220V.

Q: Why does video show henckles using 20 degree western guide? henckles says their blades are 15 . which angle is correct.? east or west?

That's incorrect. The video starts by showing that the general guide of 17 degree is removed and a 15 degree guide is installed for the western style knives. The 20 degree guide is used for eastern style knives. Zwilling J.A. Henckels knives 15 degree guide is used, with the exception of santoku knives. The west guide is the correct one for Henckels knives.
