I am looking for a sensor that can be hidden under a plastic surface, would this be able to detect though a sheet of acrylic?

Not sure about a clear sheet. I thought I had a piece and I would give it a try but I did not. I did have a sheet of anti-glare and it did set it off so that material clarity will definitely not work.

do this only do digital reading and not analog value?

Yes. Its only digital. There are similar devices with analog interfaces such as a QRE1113.
