Cajun Foodways is a great book for a cuisine scholar like myself. It is not a cookbook but a study of food and it's importance to the Cajun people. If you want a deeper understanding than recipes it is a good choice.

I just found what I was looking for in this book.A very interesting study about Cajun culture, stereotypes, perception, etc.I recommend this book.
