Can i leave the probe inside my gas fired forge and read the temp for determining heat treat temps on various steels? pretty much twice a week or more

Does this unit come with the actual nist certificate?

how many temperature probes does the Fluke 51-2 come with? It says 1 or 2 -- I am not sure how many come with a regular/standard shipment.
