Maesil is sweet, plum-like fruit, that is highly prized in east Asia for its purported health benefits. Maesil takes on many forms, but is common to see it in the syrup form, where it is used as a fruit-based sugar replacement when cooking or mixed with water for a hot or cold beverage. This particular maesil began as plum trees in the mountain village of Mupung, where farmers and artisan couple Kim Won Su and Lee Young Sun tend to their small maesil orchard. They carefully monitor each tree, which is crucial because they don't use pesticides, and harvest each plum at peak ripeness. The fruit is then placed in to traditional ceramic pots and allowed to ferment and aged for a total of three years. Product is natural and will settle over time.
