Sharp, flexible, and good quality
I found this knife was better than henkel pro 5.5 boning knife I originally wanted since their consumer grade products are mild steel and dull way to quickly, this knife holds an edge for a long time when you use it for tender cuts. I recommend purchasing a stiff boning knife if you plan on deboning steak, pork chops, etc. since it will have a higher carbon content. I'm happy with this knife and would recommend.

A Quality Kitchen Knife at a Fair Price!
The knife feels nicely balanced to me. The forged steel blade and the textured handle both seeem very good quality. The blade sharpens easily on a whet stone, and holds an edge. I wasn't familiar with this brand before but wouldn't hesitate to buy other products made by this manufacturer.
