If I were to use lactase to break lactose down remaining in fermented kefir into galactose and glucose, could I then use this to measure the glucose?

Hello Nathan,

That is a fantastic question that unfortunately does not have a simple answer.

This strip is calibrated specifically to water based solutions so you can monitor the breakdown of other sugars into glucose but the thickness of the kefir may inhibit you from getting a useful and accurate reading. If you are looking to qualitatively determine if a reaction is happening this would likely work for your needs. But, we would recommend validating any processes you use if you are using it for anything more than a simple qualitative reading.

Will these show a reaction with bottled juices (orange, apple, grape, cranberry, etc.)?

Accepted Answer

This strip reacts to glucose and only glucose. Many juices (including orange juice) have glucose so this strip would react to them.  That being said, this strip will not react to any sugars besides glucose including but not limited to artificial sweeteners.

The Accuvin Residual sugar test strip (https://www.amazon.com/dp/B0064OFVLE) tests for both Fructose and Glucose together. Another consideration is highly pigmented and colored juices (such as grape) can color over this test pad and its reaction. The Accuvin test strip's unique design removes these pigments and prevents interferences whereas this glucose test strip does not.
