What material are the caps made out of?

A hard plastic. - plastic doesn't let out any chemicals (if there are any harmful) Unless it gets really Hot - & why that doesn't bother me.The bottles are glass.

Are these glass bottles designed to hold carbonated water? (I want to make sure they won’t break during shipping.)

The glass bottles were well wrapped around with copious amounts of bubble wrap. However although none actually broke, one of them did leak. the bundle was wet and the water level in one of the bottles was about an inch shorter. I think they needed some of that bubble wrap BETWEEN the bottles as well.

Is it Borosilicate glass?

No. Not even pyrex is made out of Borosilicate anymore since it's so expensive now.

11 3/4 inches -pretty close to 1 foot. I use these bottles next to my bed and I love them. I refill them.
