Depends on the set you choose, the "beginners set" has 5. The "Deluxe set" has 9 and the "wide set" has 4. I bought the deluxe and it has everything I need for the moment. Its worth buying the whole set.

Q: What's the difference between premium flexcut and the standard flexcut plan knives? Any difference in metal quality or is it just a different handle?

I have both. I can’t tell any metal difference. Handles seem to be the only difference. The premium handles are a little bit smaller and made of cherry wood.
