How fine is the ice?

It's not a finely crushed ice powder. It's about average snow cone sized ice chunks that you would find at a carnival or something. Some are larger chunks, but on average it is pretty good at consistency when it is crushing the ice. I suppose the best way to describe it without seeing it in person would be to compare it to something commonly known. I'd say it's fairly consistently about half a Skittles candy piece or less, but occasionally there are some about a full skittle size chunks in there. Good ol' candy comparisons.

Compare to Disney frozen machine to what is your top of the line

I don't have the Disney frozen machine but I can't imagine any brand being better than this Cuisinart!  Kids (big and little) were here all summer long swimming and eating snow cones and it was like a Timex watch... it took a beating but kept on ticking!  I started out buying a "sampler" of flavors from Hawaiian Shaved Ice (12 bottles, 16 oz.) from Amazon. Then I had to order flavors by the gallon jug (from the source)-- that's how much it was used!  I found the moon-shaped ice from the refrigerator did a better job of "shaving" rather than "crushing" smaller ice.  All ice worked... just some better than others.  Hope this helped.

The ice the video shows is wet in the bowl, can I skip that step and put in directly from freezer?

You can put the crushed ice in the freezer. When ready to actually use you will need to let it defrost a little, or re-crush it in the machine to make it faster.
