I've tried the Sous Vide method with both no balls to catch escaping heat and with them. There is a drastic difference in the time it takes to heat the water to the wanted temperature and how steady that tempature is held when using the balls. They work great. The bag they come in is also nice in that it allows for them to dry out and keeps them together.

Enough balls to cover a decent sized container. The clips are a nice sturdy quality. And they come in a handy bag that drys quickly.

They don't open wide enough
