Will this work on inflatable sofa bed mattresses?

As long as the inflatable mattress does not have a permanently connected hose and it can be completely zipped up then yes it will fit and work fine as long as the sizes as listed.

What size fits a queen

The 60x72x7 will fit queen size sofa beds .

Can you leave this mattress cover on when you fold up the sleeper sofa? Is there enough length in the cover to fold the mattress?

The cover is made from a stretch polyester knit fabric, and so it should give enough for one to be able to fold and close the mattress without ripping.

Is this cover waterproof all the around or just on the top side?

The cover uses the same waterproof fabric on all six sides so top bottom and sides are waterproof.
