Now, THIS is more like it!!!😋 I CAN ACTUALLY TASTE THE CINNAMON FLAVOR!:This brand is made STRONG, like when I was young! I'm at the threshold of 70 now, but I am the youngest of 11 siblings and my mother had me in the kitchen with her BEFORE I STARTED SCHOOL!!! THIS is the taste I remember from back then. THIS IS A RARE FIND that has brought back those memories and I'm here CRYING now! 🥹🤯

EDIBLE!
This is the real stuff. Edible - for cooking. But I suppose it could be used as an essential oil too. Commercially made spiced apple rings seem to be a ghost of holiday past. But there are some recipes on the internet. I recently decided to take the plunge and try to make my own. It turned out great. But there's one caveat. Those recipes that call for "red hots" or "cinnamon Imperials" candy seem to give better results than the recipe calling for straight cinnamon sticks or powdered cinnamon.. But those candies have absolutely zero cinnamon in them. None whatsoever. And that bothered me. There are recipes to make those candies using cinnamon extract like this product. I wanted to make a hybrid cinnamon spiced apple rings using this extract instead of the candy. It worked great. I managed to use a bit less sugar than called for, and what I considered a generous amount of this extract. Which is still a pretty small amount. The results tasted just like the original recipe calling for the candy. So now I have a local holiday tradition resurrected from the grave. And in a much more natural way thanks to this cinnamon extract. My hybrid spiced apple rings lack the color, but a drop or three of red dye would change that. I opted not to, and the whole family was perfectly happy with that decision. Modern times, I suppose. 11/10 I highly recommend cooking with this extract. After many dozen reviews, this is the very first time I've ever given an 11/10.

Excellent!
This review is for the CINNAMON product, because for some reason reviews are scattered through here for every other extract produced by Cook's. Excellent cinnamon flavor - actually tastes like cinnamon (versus he numerous Ceylon cinnamon "supplements," which essentially taste like sweetened water, with no flavor or smell). Ceylon cinnamon (Cinnamomum verum) also contains much less coumarin than Casia cinnamon (Cinnamomum cassia), so is safer for those with a compromised liver or those taking statin drugs. With either variety, a little goes a long way so moderation is the key. Recommended.

weak and tasteless
I used this to make hard candy.. I recently picked up this habit of making my own candy because I'm cheap.. My only comparison is to the brand that is sold by the dram.. My recipe calls for 2.5tsp, normally when you add any extract to 310+ degree sugar is burns off VERY quickly and leaves my forehead very RED for a bit.. When I used this it was a very tiny burn off and then nothing.. So I have my candy and it's FAINTLY cinnamon not the smack you in the mouth that I was after.. This is VERY weak , I used enough that it should be strong however it's not..

Huge bottle, amazing cinnamon flavor
I was honestly surprised by how big this bottle is! Should last me a long time, probably longer than I’ll need, but that’s not a bad thing. The cinnamon flavor is really strong and authentic, much better than the usual stuff I’ve used before. I’ve been using it in baking and for making candy, and it gives such a nice punch of flavor. The price was great for how much you get, and it’s all natural which is a nice bonus. Definitely happy with this purchase and will keep using it in a bunch of recipes.

OMG! What a mistake I made!
This "cinnamon oil" was a huge disappointment. I've had such wonderful cinnamon oil from other companies in the past and trusted Cooks based on the high praise from previous customers. This, however, tastes like one huge chemical, and nothing like the cinnamon oil I've used before. I tried it first in green tea and later in coffee made from my espresso machine. I tried 3 different strengths: 4-5 drops in a 14-oz cup, twice as many drops, and 3 x as many drops. The more I used, the more "chemical" it tasted. They won't let me return this product because we're not allowed to retun food items! It does not taste like it was made with true cinnamon. It tasted wholly or largely pure chemical. This cannot possibly be true cinnamon oil. UPDATE: Cook's and their distribution service were very generous when I phoned and emailed them the next day. I learned that "extract" is not at all the same as "oil"; that extract has alcohol in it so that baking and cooking with it works better and makes the flavor better when the alcohol cooks off. Oil is for beverages, toothpicks, etc and is very, very strong, potentially dangerously strong if too much goes onto your tongue or delicate skin. Lesson learned!
