Paula Lambert is a renowned cheese maker and entrepreneur. In 1982, she founded the Mozzarella Company, a small cheese factory in Dallas. Today, the company produces some of the best Hispanic-influenced cheeses this side of the border. This is one of our favorites! Fresh Goat Cheese wrapped with large aromatic hoja santa leaves (sometimes called the "root beer plant") that flavor the cheese with a hint of mint and sassafrass. Quite simply one of the most remarkable fresh goat cheeses we have ever had the pleasure to sample. Hoja Santa is full of subtle and complex flavors, with a lovely lingering finish.
