Could i use this to check the temp and humidity in my snake terrarium?

I don't see why not. I'd think the snake is who you need to ask.

The description states "disable sleep mode" but i don't see how to in the manual. can you disable the auto-sleep, auto power-off?

I do not see that in my instructions that came with the probe. You may want to contact the mfg, or seller of the product.
