Q: how should these be stored and how long can I keep them?

Natto should be stored refrigerated. If you wan to keep it beyond the expiration date, best is to freeze it as soon as you get it. Once frozen it can keep a year or longer. Prevent freezer burn by wrapping it in plastic. It does not affect the flavor, consistency, or its probiotic nature. Natto can be kept out of the refrigerator for a few days, but since it is a living food, will get stronger in flavor and darker in color as the fermentation continues albeit at a slower rate.

Q: It's a bit hard to tell from the photo how much natto is in the package. At two teaspoons a day, around how long will a case of 12 last?

There are about 10-12 teaspoons in a container. So that is about 120-144 teaspoons in a case. I would say at two teaspoons per day, a case would last you around 2 months. I hope this helps and let me know what your experience reveals. Thanks!

Q: Does natto have to be refrigerated

Best is to either refrigerate or freeze the natto for extended shelf life. But natto can safely stay out of the refrigerator for one or more days, depending on what the temperature is. We have left natto out on the kitchen counter for a few days - it just gets stronger, more pungent, rather than spoil it continues to ferment. Natto can have different flavor profiles all the way from mildly fermented to strongly fermented. The distinct pungency in the latter can be neutralized by adding vinegar, however, although there are some natto aficionados who consider this the better natto.

Q: Can i order just 1 ? Why do i have to buy 12 when i may not like it.

Thank you for your interest in our natto. The shipping cost is almost the same for 12 or 1 container. The handling packing of 1 container is the same as for 12. It is economically, not feasible, to ship single containers for us. You can go to an Asian store and buy a container of nattto. If you like it you can go to a better quality and order from us.
