I have a couple of quality chefs knifes that just needed 5 mins each on the the 8000 grit to restore them to a great edge. I also have an unsharpened eight year old high carbon steel genuine Chinese cleaver that needed around 20 mins on the 3000 and another 20 on the 8000, but can now shave my arm. A great dual stone set that should cover all your needs and save you having to buy new knives.
