Does the joystick twist in case you have no flight pedals

Yes, it does. The stick section of the HOTAS has a twist rudder mechanism to perform this function. If later you add pedals to your setup, it's also lockable via a small locking button on the base of the stick.

Are the Joysticks in stock the ones manufactured by Logitech, and is there any noticable quality difference?

My own stick from this Amazon listing (not third party seller), is definitely a Logitech version. The metal detailing on the joystick has a Logitech G logo - the branding on the box is also very apparent that this is now being manufactured & shipped by Logitech! So far, it's of good quality. Some jitter in the throttle, and the x,y axes are very sensitive so you need to use deadzones for the joystick ideally (but only small ones, and I'd rather have that sensitivity).

No, not by itself. You need a special adapter like the cronus zen to gain compatibility
