Which one(s) do you recommend for hard kombucha?

Short answer: go with Lalvin EC-1118. It is very forgiving and can work under many different conditions. Long answer: it depends on your goals and also experience using Lalvin yeasts. All of these yeasts are capable of helping you produce nhard kombucha, the difference is in the flavour profiles and alcohol level that each yeast type can produce. If this is your first time using Lalvin, we suggest starting with Lalvin EC-1118 as it is very forgiving and can work under many different set of conditions. Lalvin EC-1118 is the best seller. Once you build more experience and can control better the fermentation conditions, then you can switch to some of the other yeasts and start appreciating the differences!
