Is it suitable for gas top grates

If you mean gas hob tops, aren't they normally enamelled. However, if it's a cast iron stove top then it would work.

Is this product waterproof?

I’ve checked the tube and it does not state that it is waterproof. I checked the Stovax website and it also does not state it is waterproof but does say it is waxed based if that helps

Is this black or graphite please? I’m after a grey matt appearance for my decorative cast iron fireplace

Hi. I bought it to restore a woodburner which had minor surface rust due to a leak. I cleaned the stove with a wired brush and used the Stovax to complete the final finish. The woodburner is a matt grey in colour and the Stovax did not turn it black. The matt grey was simply restored.

Is it suitable for an old (Victorian) cast iron fire basket?

If you do not use the fire it will make it black but will burn off with a fire. Its really meant for iron fire surrounds or external iron on wood burners...
