how do i store this? does it belong in the fridge after i open it?

Use your imagination and grab a small jar from other stuff you buy, such as small jar of olives... and put the leftover in that jar, in the fridge.

Why do the ingredients show no black bean but soy instead?

Fermented black beans, black bean sauce and black bean paste are supposed to be black soy beans.
