I designed my pasta cutters after a museum piece from 1800. These are extremely rare and can cost $100 or more in gourmet kitchen stores. Mine are beautiful in Cherry and Walnut with sharp cutting edges and deep incurves between, allowing the cutter to clear the thickness of the dough. The small size makes short work of fettuccini (1/4in noodles). The larger size can cut dumplings, crackers and stripes of dough for lattice work pies (3/4in) A thousand satisfied customers have praised their performance and ease of clean up - much simpler, more organic than a complex and expensive pasta machine. Didnt cut as sharp as I would have liked for the price.
You can only go over the dough one time then you have to rip the rest by hand. If you go over it more than once (back and forth across the dough) and go back over it not 110% how you did the time b4 you will have odd cuts.

Outstanding Workmanship
I purchased both the wide and the narrow dumpling/pasta cutters. Whenever purchasing handmade pieces I typically prefer to be there in person to make a selection. However, in this case I was overjoyed to open the box when it arrived! Quality pieces of wood were used, expert selection of grains and color tones were clearly involved. The wood feels like silk its so smooth! The handles are perfectly fitted to my hands. The different colored woods are seamlessly connected. I have a brother who does good woodworking, but nothing to compare to these cutters. The man who created these is a master, a genius, an artist, all rolled together! I think for 10 minutes after I opened them I just sat an caressed them and marveled at their quality and perfection. Simply amazing! Simple, beautiful, makes a lot of noodles quickly.
This pasta cutter is exactly what I have been looking for. I showed these to my husband back in the summer and he bought them for me for Christmas. The reason I think this cutter is excellent is because it is not a huge pasta machine to clean. Which is why I have stayed clear of them. It's a simple design that I have been looking for, for a couple years after I saw an antique noodle cutter in a store but it was a lot smaller and did not fit my needs. I make a lot of pot pie noodles quite frequently about twice every two weeks and more in the summer this cutter makes a lot more noodles and quickly. Before I was using a pizza cutter, It's beautiful I appreciate the time and craftsmanship that went in to making it. Thank you for doing what you guys do!
