Are these mild, hot or extra hot?

I like spicy food so it depends on your taste. I did not find them extra hot or too hot. I would say they are just right, not mild but have a bit of a kick.

Is this a single package or a box of 6? The info is not clear.

It is (supposed to be) a box of six. It used to be clear it was six from the description but recently the description was updated resulting in the confusion. I have bought this three times since the description changed... twice I received a package of six, once a single serving only. Amazon refunded me the purchase price for the single serving shipment immediately. If you read the price per ounce and the package weight you can also infer that it is a package of six.

can this be used as a "paste" for adding to pot with vegetables ,etc?

Yes. This product is awesome. It says on the back to add to 1 pound of meat. Look, you can make this product and then add to it how you want according to your taste. I add 3 pounds of chicken breast chopped up and then add a can of coconut milk and some cane sugar. It's all about experimenting. You make this paste how you want. You can follow the directions exact, or just little by little add stuff and make it exactly how you want. I love this product as a base. I am learning to add butter or whatever slowly to make it exactly how I want it. You can add it to veggies, beef, fish, anything. You can change the taste of this as you add stuff.
