Can these be used to convert a light microscope to a polarising microscope? If yes how to use

Yes, but I would recommend starting with a couple of linear polarizers first because they're conceptually easier to deal with.  You'll be able to have fun with just one of these blocking the light on either side of the specimen.  With two you can learn even more about the specimen by blocking the light both above and below it.  In particular if you cross the filters before inserting the specimen to block all light and then insert the specimen, any light you see tells you that the specimen itself is influencing the polarization.

In parallel with experimenting with polarizers in microscopes, read up on the relevant Wikipedia articles, in particular "Polarization (waves)" and "Polarized light microscopy".

Once you feel comfortable reconciling what you see in the microscope with what's in the articles, then move on to circularly polarized light, a more subtle concept.  Photons of wavelength λ have momentum h/λ.  Circularly polarized light consists of photons with spin, that is, with some of their momentum being angular.  This will open up a whole new avenue of exploration with polarized microscopy.  Note that if the light source of your microscope is obtained via a mirror, the mirror will reverse the handedness of the circularly polarized light, which you can observe by experimenting with the placement of the filter(s) on one side or the other of the mirror.

are the sheets transferable. do they stick to glass for a filter plate or lens?

If I add the pair of sheets between two crystals can they be used correctly and preventing them from burning if I put them in front of each projector?

this will not work for that. you need a infrared stop/block type of filter as  that is where most of heat band of light is contained.
