Since 3000ml is only 6.6 pounds, this unit should handle the weight but you should use molly bolts to anchor to the wall. We have 6 of these units that we have been using for 5+ years. Pleased with their performance, but can't say that we have suspended 6 pounds of weight on them

Can this hook carry an EZ Access bedside shower bag filled with 2.5 gallon of water?

Probably not, 2.5 Gallons of water would likely be too heavy as these are designed for regular sized IV bags.
