Does this need to be refrigerated before/after opening?

As long as it's in the sealed pkg, it doesn't need to be refrigerated. After opening, I'd keep it in the refrigerator. It has a very long shelf life, but best to keep cool and dry. Sometimes I grate more than I need for one meal and then keep the grated bottarga in the freezer, so it's ready for an instant meal...sprinkling it into hot pasta is enough heat to bring the flavor back up.

How is this product salted but the nutrition label says zero sodium?

Well it’s cured. So it definitely has salt. Not sure why the label says that. But it’s not so salty that you can use it as a salt substitute. Especially since you’re only going to be using small amounts to begin with.

Is it still usable once the color changes to a dark grey??

YES! Texture becomes a little denser, and thus easier to grate; flavors remain the same.

I like this brand. Ordered a few times. The last order consisted from two packages. One package has the great quality and flavor. The second package had not really good sealing. It had some air inside and it was the reason for the some discoloration. Instead the light honey color it become blackish. The taste as well from 5 I wood give 3.5.
