Can you use with any ice cubes or do you have to freeze them in a special tray (as I've seen with another model from this manufacturer)?

Any ice cube will do. You can also freeze small enough cups that will fit right into the mouth of the machine. That way it comes out like snow very little crunchiness. Ice cube's come out crunchy. Both ways are excellent and you going to absolutely love the machine

Are the syrups gluten free?

Do you have to refrigerate the syrup before or after opening?

We don't refrigerate ours before or after and they're just fine.
