Excellent consistency, wonderful flavor.

After making risotto for 30+ years, I have learned to enjoy carnaroli rice over arborio. Hard to say exactly why, probably texture - in that the grains seem to maintain their integrity a bit more; plus a hard to describe something about the flavor. I was searching for carnaroli on Amazon - as it is not available where I live, and my previous go to brand simply no longer carries carnaroli rice - and found this. It is not inexpensive, but a little goes a long way. We have been making risotto for two (1 cup of rice at a time more than enough) over the winter and are still working off the first box. Would definitely buy this again.

This rice is outstanding and makes wonderful risotto. You must try this rice, it’s that good and worth every penny. It arrived promptly and well packaged. Superior product. Will definitely make this a staple in my kitchen.

This Carnaroli Risotto Rice made a delicious, creamy risotto. However, it is very expensive. I doubt whether most diners could tell the difference between Carnaroli Risotto Rice and Arborio Risotto Rice, which is in itself expensive enough. I don't think I'll order this product again because it is so expensive.
