I am a hybrid. Daddy was SE Penna coal mining stock, Mom was pure New Orleans Mardi Gras Queen (and yes she was) I grew up around PGH. I got authentic red beans and rice when we visited maternal grandparents in NOLA and after they died, Mom did it. I tried for years to get it right and always came THIS CLOSE. Then a girlfriend from Louisiana said, 'Honey are you still doing that? HERE." I thin it a bit with water, add a few bay leaves and some cajun seasoning. That's it. Granny's red beans. Just add rice. I keep a case on hand.
