Wow this was a surprise. It has that very slight grainy texture (very slight) I remember when I'd buy a hunk of cheese to eat for/with lunch when traveling in Italy years ago. It has a mellow, nutty flavor. A cut above what I typically buy...I don't buy super-expensive cheeses so I suppose it's possible something could be found at a higher price point that's like this, but I've not encountered it in the US at this kind of price/in this kind of range where I shop.Lovely with a green apple, divine shaved thin on pasta. I was looking for excuses to use it.It is so good that I find myself eating chunks of it, and that won't do (for my eating plan/diet-I can some shaving). I literally am not going to buy it again because I like it too much and don't have enough willpower.Shaves of parma cheese have minimal impact on a lower cal diet and maximum flavor added....you have to be able to limit yourself to just shavings though.You can buy it and then make this salad:Arugula, walnuts, shaved parma, lemon -garlic homemade vinaigretteIT's phenomenal. What trips me out most about the Sartori's Parmesan is the texture. Compare to the creamier & sweeter Bellavitanos, this is It's extremely chewy & rubbery. The classic Sartori flavor still wafts through the Parmesan crumbles but it does put a peculiar twist on a traditional recipe.

Buttery, nutty, caramel taste, comparable to imported Parmigiana Reggiano, but easier to find, and at a lower cost. I'd previously tried the grated Sartori Parmesan that comes in a bag, and wasn't too impressed, however the Sarvecchio version was much tastier. In fact, I tried to pick up another wedge on Amazon the next day, but it was already out of stock

I am a cheese snob. I am tickled pink that I tried this. I have tried just about every Parmesan and Gruyere cheese out there. This one is fantastic. If you like the real Italian parmigiano reggiano, give this one a try. You will not be disappointed.

This cheese is DELICIOUS. It’s my first time buying but definitely won’t be the last. Tons of flavor with that little bite you expect from parm. I could eat the entire block in one sitting. Seriously, it’s so good.

I've tried several more expensive parmesan wedges and rinds, but this one really sets itself apart. I like the nutty, savory taste and how easily it melts on hot meals. It isn't too bitter, or strong like true Parmigiano-Reggiano.
