Would this replace a mixer? e. g can it do cookie dough, cake batter, egg whites, etc?

The Ninja can easily do cookie dough and cake batters. But it is a high speed unit. Anything that needs blending on low would not do well with this. I still have my mixer and use it for low speeds. My Ninja did come with a "dough blade" and I do use that for pie crust, bread dough, etc. I have not done egg whites, but I imagine it would do well as the high speed does incorporate a lot if air. Whipping cream does well.

Can you put hot soup/liquids in the blender?

You cannot put HOT liquids in it, but you can put warm liquid into it.

I have looked everywhere on the internet and cannot find more single serve cups. Does anyone know where those are available?

I know this is late, but they have some on ebay for good price, single serve cups and lids for all the Ninja Blenders.

Does anyone get food particals caught in the bottom of the four corners when put in dishwasher?

Yes! It’s poorly designed as far as dishwashers go. All the gunk and bits get stuck between the bottom of the blender container and the corners that secure the container when blending.
