Does shipping the cheese have a negative impact on it?

No. Mine came packed with ice and was still cold when I received it. I chipped mine into 1 pound chunks and froze them. Freezing it seems to affect it a bit as it doesn't slice as easily after being frozen. I love this cheese. To me it is a comfort food as it's the cheese of my childhood. And melted on thinly sliced grilled beef is the closest thing I can come to a Philly Cheese steak in Colorado!
