Would this chocolate be good to put in the gelatine? I want to make a sea life cake and some dolphins and mermaids under te "water" (gelatine).

If the gelatine is poured while hot you might lose definition or even melt. I would try pouring gelatine once cooled down just before setting point and onto your frozen white chocolate paste models. Hope it works
