Love this knife!
Bought this knife as a birthday gift for my husband, who does the majority of the cooking in the household. First of all, it’s strikingly beautiful — love the patterns on the blade. It was also very sharp out of the box and ready to use. He loves the way it feels, a good weight to it without being too heavy. Overall really good quality and we’re both super happy with it!

Super Sharp, Great handle, comfortable size and very superb product.
I've been in the hospitality industry for over ten years and I used a lot of knives in my experience. The Miyabi that I purchased is very sharp and makes cutting any product a breeze. I would get calluses on my index finger on the lower part from using other knives and applying a lot of pressure when cutting produce, such as butternut squash, raw beets, watermelon, etc..., no matter how sharp my knives would be, nothing comes close to the sharpness of Miyabi!! The handle is round and grips nicely, the handle doesn't slip from your hands even if your hands are wet. the handle has a nice grip for your fingers to grip on, the blade is the perfect size for a chef knife, I always use a 7-8 inch long blades in the kitchens. I'm sure I have covered enough for you to buy the knife because when I was shopping for a Miyabi, I wanted to know all the info that I just typed up. It's sharp and stays sharp, a little filing and the knife is back to super sharp. trust me, you will not apply a lot of pressure when cutting produce with it, the blade does all the work for you!!!

Fantastic chef's knife - 7 years later
I bought this knife in Jan 17 and it is still going strong. I've taken good care of it, not putting it in the dishwasher, hand washing and drying immediately after use. I've sharpened it a few times and it still holds a great edge. I highly recommend this knife.

Sharp and Well Balanced
The Miyabi Kaizen Chef's Knife 8in is a beautiful kitchen tool that combines elegance and precision. the steel blade is razor-sharp, offering excellent cutting performance for everything from vegetables to meats. Its Damascus-style pattern adds a touch of artistry, while the ergonomic handle, accented in red, ensures a comfortable grip during extended use. The knife is well-balanced and feels great in the hand. I just recently purchase it but it has been extremely useful in the short time I've owned it.

Razor sharp, great quality, good durability
I’ve been using this knife as my daily chopper for about 2 years. I steel it but have never sharpened it and although the blade is starting to get some nicks it’s still razor sharp. This goes through frozen meat like it’s butter and will slice through tomato skin without crushing the tomato at all.Handle is comfortable but could have a little more of a belly to make it less susceptible to rolling.Knife is not dishwasher safe. Stainless steel is rust resistant but make sure to fully dry the knife before storing or it will get some discoloration.The Damascus is real not etched.

Nice to look at, nice to use!
The knife is absolutely beautiful. The steel pattern and the handle exude good quality. It arrived in great condition and cutting through things is a very satisfying experience. It went through a banana without even pushing down. It’s also very comfortable to hold and has a balanced weight to it without feeling heavy. The edge is paper thin and does seem a little delicate so I would not recommend sharpening this with anything other than a whetstone. However it does seem built to last as long as you take good care of it. It’s an expensive knife but the craftsmanship is pretty worth it. I’m new to Japanese blades and since Miyabi is simply a sister company of Zwilling I wasn’t sure what to expect but I am actually very satisfied with the quality control.

So far so good! New favorite knife.
Did some research on decent Japanese style knives and this is the one we landed on. So far we are quite happy with it. The weight and distribution feels good, it is comfortable to hold, of course the blade was quite sharp out of the box, the knife seems well built, and it is beautiful.The chipping and relative fragility that others mention in reviews here is a part of the nature of the type of process and material used for making this knife. For <$100 I think the value is quite good. I do wish the handle was wood, or at least a better looking resin, but we can get past this. Will update as we use the knife more!
