Q: Is this pure Sevia or does it contain erithrytol or anything g else?

Pure Via Stevia leaf sweet granules is a blend of stevia and Erythritol. Pure Stevia is 250-300 times the sweetness of Sugar therefore it needs to have Erythritol added to get the volume required. Pure Stevia is very rare as you would not be able dispense in the tiny amounts required to equal a spoon of sugar. For example 1 grain of pure stevia = 250-300 grains of sugar.

Q: Ounce for ounce, how much stevia do you use in baking (i.e. a cake) to equal sugar (ounce for ounce). Thank you.

It would depend on your taste. But for sweetening purposes for say a cup of tea, or porridge, or stewed fruit, I use very little. About 1/4 teaspoon or less for tea, 1/2 teaspoon for porridge, and a teaspoon or under for stewed fruit. I would hazard a guess that half a teaspoon would equal an ounce of sugar. But you’d have to experiment. This is the best stevia product I’ve found.

Q: Can you cook it with sauces or jams? Erythritol does clamp or crystallise with sauce and jam so how about this stevia?

Yes you can cook with it , it is sweeter than sugar but use cup for cup against sugar and suggested that extend your baking time a little. Anything that clamp or crystallises is not mixed properly and added while temperatures are different. You need to add before baking or heating

Q: Can it be used for baking?

Yes you can bake with Pure Via Stevia Leaf Granules as it was sugar. The only difference is the dosage which is 2 for 1. This means that for 200g of sugar you only need 100g of Pure Via Stevia Leaf Granules. I hope this helps.
