During the growing season, the underground edible tuber increases in size until the vine goes dormant in late fall or winter. At this time the yam tuber is dug and consumed. Tubers left in the ground will sprout again in the spring and increase in size the following year. Yams grown from larger aerial tubers will usually produce 1-3 pounds of edible tuber the first year, but over a few years time they can achieve a weight of over 100 pounds.
