Not for High end expensive cutlery but a good sharp edge for the rest Not for Ginzus, Toss Them. Read
I would not use this on very expensive blades. I'm talking about $400 sets that most of us don't use. I use a Chicago Cutlery higher end and for them, that's only about $120 for a 15 piece set. Their knives are well suited for this kind of sharpener as they work well but don't keep an edge without a bit of maintenance. STAY OFF OF THE FIRST or Roughest wheel unless your sharpening an old nicked or badly dulled blade. Use a butcher block table, wood or a soft plastic cutting surface as it's much easier on your knives. An important thing to remember is 90% of the time you simple need to run it through 3, the non moving ceramic pucks that straighten out the edge. There is no wear on the knife and after a couple of uses on plates especially for serving knives they need only be straightened as a good edge is a few hundred atoms wide. If your knives need more start with the second setting and a couple of smooth strokes down each side of the middle or #2 is fine and fine with the number 3 as a finish to further polish the edge. Do not use much pressure at all. Let the weight of the blade do most of the work. And god forbid, toss oput those ginzus and dont use them as it's bad for the sharpening wheels.

Fast, efficient... much needed upgrade from my 30 year old model.
I purchased my first Chef's Choice Diamond Home Knife Sharpener 30 years ago. It was a 2 stage and it did a very efficient job, but I had to do some finishing work of my knives with a steel sometimes. That was OK, I was used to it. After all, that was how it was done 30 years ago. Well, the cord got cut on that old unit, forcing me to look at a new sharpener. Oh my! I used this unit recently and I am IMPRESSED! So much easier to use. My old unit relied on magnets to hold the blade in perfect alignment, but the knife could pop off the magnet easily and change the shape of the blade. Not a good thing. This unit does NOT do that. This unit, is designed with narrow channels to insure the blade remains in place during the honing process. This unit also takes less time to put a new edge on my knives.

Worked great! Read the instructions
Tried this on three old knives before using on one of my expensive knife. Worked great! Read the instructions, followed them and now have three old very sharp knives. Easy to use, instructions were easy to follow. I would recommend this at this time, as I have only used it once.

Highly Recommended!
The test of this machine came when I pulled out two of my favorite 8 inch chef knives that I've had for a little more than twenty years -- that have never been sharpened. I regularly use a steel on them prior to use (which was a lost cause because the nicks on the edges were too deep) and once, several years ago, there was a hopeless attempt at using a wet stone to put the edge back. What a hideous endeavor. Fail!After running the most damaged of the two through the machine several times, the end result was nothing less than amazing. The nicked areas were removed and the final finishing touch was miraculous, to say the least. I then sharpened the other knife which, fortunately, had only a few minor nicks in its edge. After spending a few minutes on each knife, it's clear that both of these babies have been given new life and are now better than they were when purchased. They are living a resurrected life with beautiful, razor sharp edges. Fawesome!Would I recommend the Chef's Choice Diamond Hone Sharpener 270? Absolutely! This turned out to be one of the best kitchen investments I've made ... perhaps it's THE best! One can make do with less than optimal quality tools in the kitchen, but having a beautifully sharpened knife blade, as I've just learned, isn't one of them.

It's okay, but not okay enough for me.
I had high hopes because "chef's choice" has some pretty expensive sharpeners with very good reviews. I hoped this more affordable model might be a bargain. It's not the worst. If you have average quality kitchen knives and want to periodically get them fairly sharp, this should do the trick. If you have high end knives or very heavy knives, such as many hunting-type knives with a thicker spine or if you expect your knives to be shaving-sharp, this isn't for you. It is pretty much impossible to keep consistent contact with the blade throughout the stroke. Also, many knives will not be able to sharpen close to the handle and my hunting knives are too thick for the slots in the machine. Longer straight-edged knives of moderate thickness are ideal for this machine and when sharpening those I got decent results, but not great. I ultimately returned this item.

Good product
I've had this for around a year. My good knives had gotten dull, so I stopped using them and used Ecko and some other cheap knives for years. I saw this sharpener and decided to give it a try... Amazon has a good return policy, so I took the risk that it would be worth the money. Pretty good instructions came with the product. It is easy to use. Be sure to follow the directions so you don't take too much material off of one side, because your "sharpened" knife will want to curve while cutting, rather than slice straight through whatever you're cutting. This is especially apparent when slicing through a head of cabbage or lettuce. Yep, I did it. I put the knife through the sharpener again and corrected my error. Once sharpened, my good knives need only a touch up a few times during the year. A cheap knife won't stay sharp even if you sharpen it with a million dollar sharpener. This sharpener is worth the money.

Works Well
It definitely takes some skill to use, but it doesn’t take long to master. I found the slower I made the passes, the better my results. This sharpener works better than a previous sharpener I purchased and subsequently returned. I can get my knives sharp, but not extremely sharp like they came from the factory.

Great sharpener!
I was very surprised at the results. I have a bunch of knives in the drawer I have not used in years. I have tried various hand held sharpener but none worked. Always butcher a tomato when done or they might hold an edge for one use. Now ALL the knives are razor sharp AND are holding their edge. So impressed. I now just use the stone on the end to keep the sharp. Highly recommend.
